Edina from Ab Fab once said “sharing is for poor people.” Well, she couldn’t be more wrong. Not only is it a long standing practice in various countries, it’s a culinary trend currently breaking the waves at many restaurants. One such restaurant is the new hotspot in the southern Dutch city of Den Bosch, Noble. Noble is housed in the building of former renowned upscale restaurant Chalet Royale, where patron cuisinier Edwin Kats reinvigorated the trend of shared dining. At Noble you can choose from an extensive menu filled with little gems, to be shared of course. Lots of fusion cooking and unusual ingredients to make you feel you are really getting your money’s worth.

I started with the chickpea puree with a leg of duck, garlic and sumac (a spicy lemonade syrup, often used when cooking poultry). Continued with sea bass with ceviche, coconut, radish and red pepper. Topped it off with cream of pumpkin pasta with wild mushrooms and parmesan and of course had a little dessert to polish it all off with. It would be rude not to. The wine was equally superb, as you would expect. Everything from start to finish left me thinking ‘where have you been all my life.’  By far one of the best restaurants in the Netherlands I’ve ever eaten in. Note, Noble has only been open for just under two months. So if you want to dine there at night, book well in advance. Enjoy!
